Summary


There are many things we take for granted here in Northern New Mexico -- plentiful sunshine, spectacular vistas and traditional foods made spicy by red and green chile.

The truly unique character of our local food was impressed upon me when I brought a college friend home to visit during a school break. We had just ordered enchiladas in a local restaurant when the waiter, scribbling on his pad, asked "Red or Green?"
